(Grill chicken on grill pan; rub with olive oil and spices - rosemary, thyme, Italian blend)
- 1 or 2 cups sliced carrots – steam in microwave about 5 minutes
- 4 cloves minced garlic
- 1 small onion chopped
- ½ cup chopped green or red pepper
- ½ cup chopped celery
Place all of the above in a soup pot and add:
- 2 cans diced tomatoes (one should be seasoned with basil and oregano)
- 1 can white canellini beans (white kidney beans – Progresso makes them)
- 1 or 2 cans chicken broth
- 1 can artichoke hearts, drained and chopped
- 1 small can mushrooms
- 2 or 3 bay leaves, depending on size
