Laura’s Broccoli Cornbread

  • 1 pkg. chopped broccoli, thawed and drained
  • 4 eggs
  • 1 medium onion, chopped
  • 6 or 8 oz. cottage cheese
  • 1 stick margarine or butter, melted
  • 1 box Jiffy cornbread mix
  • 1 tsp salt
Mix all ingredients except Jiffy mix. When well blended, stir in Jiffy mix. Pour Into greased 9 X 13 pan. Bake at 400 for 30 minutes. Cut into squares to serve.
Good with the soup!
